flying in wind ? how much is too much and how do i actually get better at it

so ive been flying for about a year now, mostly calm days because honestly wind just scares me a little. had a close call a few months back where a gust came out of nowhere and my mavic 3 nearly went sideways into a treeline before i could correct. managed to save it but my heart was pounding the whole way back.
anyway ive been trying to actually get better at flying in wind instead of just avoiding it. been going out on 10-15 mph days and just... practicing? but im not sure im doing it right. like i dont really have a method. i just fly around and feel bad when it gets pushed around and try to compensate. is there a better way to actually build this skill or am i just supposed to grind through it until it becomes instinct
also at what point do you guys just say forget it and go home. i know the spec sheets say whatever but real world is different
