first proper 5inch build ? confused about ESC and motor pairing

so ive been flying whoops for about a year and finally decided to step up to a proper 5inch freestyle build. got a Mark4 frame coming in the mail and ive been trying to figure out the electronics stack. everywhere i look people are recommending different things and im starting to second guess everything i thought i knew.
right now im looking at the Aikon AK32 35A 4in1 ESC but im not sure if thats going to be enough headroom for the motors i want. i was originally thinking 2306 2450kv motors on 6S but some people in my local group are saying i should go 2207 instead for freestyle. does motor size actually matter that much or is this just people being opinionated about stuff that doesnt really matter in practice
also completely separate issue but im a bit nervous about the soldering side. ive done basic stuff on wiring looms for RC cars but never done a full stack before. any tips for not destroying a 4in1 ESC the first time i touch it would be great. my iron is a Hakko FX-888D so at least i have decent gear for that part.
