switching from DJI to analog ? what am i actually losing video quality wise

ok so ive been flying DJI O3 goggles for about a year and a half now and honestly the video quality is insane, like i know everyone says that but coming from nothing its just ridiculous how clear it is. but the latency has been bugging me lately, especially when im doing tight gates at speed and i feel like im always half a frame behind or something. might be in my head but it feels real.
anyway my buddy runs a fat shark dominator v3 setup with an RX5808 module and some kind of clover leaf on the vtx and he keeps telling me the latency difference is night and day. i flew his quad once and yeah it did feel more immediate but the picture looked like... vaseline on a window compared to what im used to lol. so i guess my actual question is like is there a middle ground here. is there an analog setup that looks halfway decent or is it just a compromise you make for the lower latency. also what vtx wattage do i actually need for a medium sized park flying situation, he said 200mw but someone else told me 400mw is the minimum worth running
