flying in wind ? when do you just call it and go home

so ive been flying for about two years now mostly fpv freestyle but ive been getting into cinematic stuff lately and wind has become like my biggest nemesis. with freestyle you kind of just punch through it and it adds to the chaos which is fine, but trying to get smooth cinematic shots when its gusting 15-20mph is just miserable. the footage looks like im having a seizure even with horizon mode and all the filtering cranked up.
i know the obvious answer is just dont fly in wind but like... i drove an hour to this location and the forecast said 8mph. anyway i want to get better at actually reading conditions and also just flying in wind in general. my muscle memory for compensating gusts is getting better but im still not confident. whats the threshold where you guys just pack it up, and is there anything that actually helps for building that skill or is it just hours and hours of practice
