flying in wind ? when do you actually call it?

so ive been flying my mavic 3 for about a year and a half now and wind is still the thing that messes with my head the most. like i know the specs say it can handle up to 38 or 43 kph or whatever but thats not really useful info in practice is it. the drone holds its position fine but my footage is garbage and the thing is working so hard you can hear it straining.
yesterday i was out at the coast and it was probably 25 kph sustained with gusts pushing higher and i kept second guessing myself the whole time. landed twice thinking id call it, then took off again. ended up with like 40 minutes of unusable clips because the horizon was just constantly correcting and the whole image had that jittery stabilized look.
curious how other people actually make the call on this. do you have a number in your head, do you watch the trees, what. because i feel like ive been winging it for a year and still dont have a system.
