Payload weight limits vs actual stabilization performance discussion

I've been testing different camera payloads on my custom hexacopter build (3.2kg total weight, rated for 1.8kg payload) and finding some interesting discrepancies between theoretical limits and real-world performance.

The specs suggest I should handle a 1.5kg DSLR setup comfortably, but I'm getting noticeable gimbal shake and reduced stabilization effectiveness above 1.2kg, especially in windy conditions.

My gimbal is a 3-axis brushless unit with proper IMU calibration. Are manufacturer payload ratings too optimistic? What's your experience with actual vs rated payload performance?
