First 5" build - confused about motor KV selection for track racing

Building my first dedicated race setup - Catalyst Machineworks frame, 2207 motors but can't decide between 2450kv or 2650kv. Track usually has tight technical sections and I'm targeting 100+ mph on straights. Running 4s with 5040x3 triblade props. Will the higher KV give me better punch out of corners or just burn more current? I know capacitors are important for ESC protection but wondering if higher KV motors stress the electrical system more during rapid throttle changes.
