thinking about getting into FPV - prebuilt or just build from scratch?

so ive been flying a DJI mini for about a year and honestly im kind of bored with it, like its great for photography stuff but i want to actually fly something fast and fun. been watching a ton of FPV content and i think i want to get into it but im already confused about whether i should just buy something prebuilt or go the custom build route
i looked at the DJI Avata and honestly it looks cool but people keep saying its not "real FPV" whatever that means, and then theres stuff like the Geprc Cinelog or the iFlight Nazgul but i dont even know where to start comparing those. my budget is probably around 400-500 dollars for the whole thing including a controller if thats even realistic, i honestly have no idea
do most people here recommend just picking up something prebuilt to learn on or is it worth learning to build from the start? i dont mind soldering i used to do some electronics hobby stuff years ago
